A sandwich that highlights Minnesota apples and pork and a treat right out of church basement potlucks are among the 36 items on the 2026 Minnesota State Fair New Fair Food list.
The Apple Donut Ham Grinder and Banana Butterscotch Barnraiser will be served at the Minnesota Farmers Union Coffee Shop at 1635 Dan Patch Ave. near the Snelling Entrance at the Minnesota State Fair. The coffee shop is open from 7 a.m. to 9 p.m. all 12 days of the Great Minnesota Get Together.
“Each year, we strive to showcase the flavors of Minnesota in unique ways at the Minnesota Farmers Union Coffee Shop at the Minnesota State Fair,” said MFU President Gary Wertish. “The Apple Donut Ham Grinder features foods from two MFU members, Hidden Stream Farm and Pleasant Valley Orchard. The Banana Butterscotch Barnraiser is topped with whipped cream from Stony Creek Dairy. We look forward to seeing you at the MFU Coffee Shop at the fair.”
Created by James Beard-nominated chef John Kraus, the Banana Butterscotch Barnraiser is vanilla pound cake layered with roasted bananas, butterscotch sauce and caramelized croissant croutons made by Patisserie 46. It is topped with whipped cream from Stony Creek Dairy and garnished with nut-free cereal mix made with Corn Chex, Biscoff cookie butter, chocolate chips, butter, powdered sugar, vanilla and salt.
The Apple Donut Ham Grinder features First Kiss apples from Pleasant Valley Orchard sliced into rings, battered, deep-fried and tossed in cinnamon sugar and stacked with sliced uncured ham from Hidden Stream Farm, dressed arugula and drizzled with hot honey. It is served with herb-whipped ricotta spread on a toasted hoagie roll.
The MFU Coffee Shop is managed by Farmers Kitchen + Bar, an MFU-owned farmer-to-table restaurant in downtown Minneapolis.
Minnesota Farmers Union has had a presence at the Minnesota State Fair since 1953, with a building on the corner of Dan Patch Avenue and Cosgrove Street. It became the Farmers Union Coffee Shop in 2003.
The 2026 Minnesota State Fair is Aug. 27-Sept. 7 at the Minnesota State Fairgrounds.
