Here is what you’ll need:
- 3-4 large Red Peppers
- 1.5 lbs mild Italian sausage
- 1 medium white onion, diced
- 1 jalapeno, seeded and diced
- 1 small can whole kernel corn, drained
- 1 can diced green chilies, drained
- 1 tsp BBQ rub
- 1 cup shredded smoked mozzarella
Preheat your smoker to 275.
In a medium skillet, brown the sausage until almost completely cooked, breaking up the larger chunks. Then, add the onion and jalapeno and cook until softened. Remove from heat, add in the corn, chilies and BBQ rub and set aside.
Cut the peppers in half and remove the seeds. Scoop the sausage mixture into the peppers and place in a wire rack for smoking. Put in the smoker on full smoke (I used hickory) for one hour.
Remove, and cover with the shredded smoked mozzarella. Back in the smoker for about 20 minutes to melt the cheese.
Serve immediately.
