Here’s What You’ll Need:
- 1 Tbsp butter
- Corn kernels from 4 ears of corn, removed from the cob.
- 2 Tbsp mayonnaise
- 4 Tbsp Cojita cheese
- 1/2 tsp paprika
- Salt & Pepper to taste
Melt the butter in a skillet over medium high heat, until the corn starts to brown. Stir frequently.
Place into a large bowl and mix in the remaining ingredients. Serve hot.
