Joe Brunner from Mezzaluna loves a good sauce. Condiments can make or break a great summer (or anytime) gathering. He brings in some ideas on what you can do to spice up something you already love or make something special from scratch.
First off, let’s talk the “Duos” – meaning things that are just two ingredients. For you mayonnaise lovers out there, he suggest things like “Fancy Sauce” aka Fry Sauce is mixed mayo and ketchup. Mayo and horseradish. Mayo and relish. You can basically take any other condiment up a notch by mixing it with some quality mayonnaise!

Tomato – Bacon Jam:
Makes 1 quart
½ Pound Thick cup bacon, diced
1 yellow onion, diced
2 cloves of garlic, minced
½ cup maple syrup
¼ cup balsamic, or white balsamic vinegar
2 tablespoons yellow mustard
1 tablespoon Worcestershire sauce
1 cup ripe tomatoes, diced
1 tablespoon brown sugar
1 teaspoon black pepper
1 tablespoon salt
- In a medium sized pot, render bacon over medium heat until crispy. Add onions and garlic, cook until softened. Drain off grease.
- Stir in remaining ingredients and simmer. Stirring occasionally until the mixture reduces into a jam like consistency. 30-40 minutes.
- Serve chunky or, transfer to blender or food processor and pulse to desired consistency.
Rhubarb BBQ Sauce:
Yields 2 quarts
1 red onion, diced
10 stalks of rhubarb, diced
6 cloves of garlic, minced
½ cup garlic powder
¼ cup yellow mustard
¼ cup apple cider vinegar
½ cup ketchup
2 tablespoons salt
1 ½ cup molasses
- In medium pot, sweat rhubarb, onion, garlic over medium heat until softened.
- Add in remaining ingredients, cook down for 30 minutes. Serve. Or if you want a thin sauce, transfer to blender and blend until smooth. Cool. Serve.
