If you have a cast iron pan, there is a good chance you have your own set of rules to go along with it… and you’re not alone!

Seasoning
“Seasoning” your cast iron skillet is a critical part of the process and is simply baking fat into the pan to prevent food from sticking and to maintain the finish.
After cleaning the pan with hot soapy water, layer on the fat or oil and stick it in the oven for an hour to set properly (allow pan to also cool in the oven).
Washing
A properly seasoned cast-iron pan should be fairly non-stick, and also not affected by the “surfactants in dish soap.”
So, don’t be scared to use soap on your cast iron, however, stay away from dishwashers or metal scoring pads. And, you probably don’t have to soak on the soap every time you use it.
Cooking
While Chef Eric Watson prefers to use a cast iron for a good piece of protein, there isn’t anything you can’t cook in a cast iron skillet.
One of the advantages of cast iron is it’s versatility: put on the stove top, in the oven or on the grill!
