Aquavit
A Scandinavian spirit, made in the gin-style. The flavors are caraway, coriander, star anise, fennel, citrus and dill. “When you’ve tasted one aquavit, you’ve tasted one aquavit,” says Joel. There are very few that are alike. This pairs incredibly well with fish (think salmon!) and works well in a dill sauce.
