I think it’s fair to say Kate had no idea the success her cupcake idea would be!
Last month, the Hillsboro Cafe decided to sell some cupcakes – with part of the proceeds going to student lunch debt – and, Kate ended up making almost 550 cupcakes!

April’s cupcake will be a lemon cupcake with raspberry or lemon icing! (yum!)
