JJ pulls out a marinade recipe from his family cookbook. His dad, J.D., was a great man – but lacked culinary skills. What he did cook (when forced to) was pretty good. You don’t need a deep bench to have a couple of signature items.
This marinade is sweet and salty. A perfect combination when grilling pork chops.
JD’s Pork Chop Marinade
1 1/4 cups of French Dressing (not the creamy)
1 Tablespoon olive oil
1 Tablespoon soy sauce
1 Teaspoon brown sugar
Mix together in a bowl – set aside about 1/4 a cup of the mixture.
Place the rest in a ziplock bag with the pork chops. Put into the fridge for 2-3 hours. Remove and let marinade at room temperature for one hour.
Throw onto the grill. Baste during the last 3 minutes with set aside sauce.
JJ’s Apricot Chutney
4 cups of chopped apricots
1/2 cup apple cider vinegar
1/2 cup brown sugar
1/2 cup chopped red onion
1/2 cup golden raisins
3 Tablespoons Honey (organic or natural is best)
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon cumin
(Add a teaspoon of Red Pepper flakes for some heat)
Add mixture together in sauce pot. Heat on low-medium until it simmers. You need to stir constantly. This stuff is sticky and very sugary – so burns are no good. Once you get it to simmer, remove from heat and stir occasionally. It will thicken up. Serve at room temperature or slightly warm.

Pizza (take & bake pizza stops have them made, taste great grilled)
Bananas (slice banana ALMOST in half, add chocolate and marshmallows)
