Scott Thomasson from Pig Tamer BBQ tells his story of an average joe who has a passion for BBQ. In fact, he’s one of the organizers of the
North Dakota BBQ Championships
. By the way, the championships are on Saturday, September 8th at the Scheels Home and Hardware location on 13th Ave. Stop by and try all of the 19 teams who are competing!
Here is a little BBQ recipe to get your taste buds ready!
This BBQ sauce is perfect for grilled chicken. Whether you are doing a whole chicken or breasts, this sauce will knock it out of the park. NOTE – a good bbq sauce should be applied just before you pull the meat off the grill. Grilling meat coated in sauce is just asking for flair ups or burns!
2 Tbl – Extra Virgin Oil Oil
1 C – Ketchup
1/4 C – Light Brown Sugar (packed)
1/2 C – Onion, finely chopped (in a pinch, use onion powder)
1 Tbl – Minced Garlic
1/3 C – Apple Cider Vinegar
(Dealer’s Choice) Add some red pepper flakes for heat
Slice a lemon in half and squeeze the juice into the saucepan
Simmer in a saucepan, apply to the chicken warm (should be very liquid-y)
Keep a little aside and serve it with the chicken if folks want to add a little more as they dig in!
