Fargo is no stranger to food trucks. With outfits like Taco Bros. have been around for more than a handful of years appeasing the cravings of downtowners at all hours. 2019 will be different for those who blindly venture to Broadway looking for their food truck fix. Construction on new buildings along with losing some parking spaces have food truck operators looking outside of downtown to setup shop.
Jay Halvorson joins IT2 to discuss some conversations the food truck community is having with city management on both side of the river, private businesses looking to host food trucks in their parking lots or community leaders planning events throughout the warm months. Jay mentions that heading west out of downtown is where the most businesses are trying to get trucks, but notes that the ability to appeal to 200 people for a profitable lunch serving can be tough.

Jay’s business does not charge to setup and serve. They are fully licensed and insured, they cover the cost and prep of the food. All he asks for is space…and power/water hook up if possible. But that isn’t a dealbreaker. For him, a good lunch crowd can make or break a full day’s work. So when a business reaches out, he needs to figure out how to appeal to lunch goers in the surrounding area to make sure he can cover expenses and keep the grill hot (overhead, right?!?!)
For the summer of 2019, the best way to ensure you scratch the itch for a gourmet hot dog, real texas pit bbq or whatever else you are craving – follow that particular truck on social media. They post their locations on the regular and you can always message them before you head out for a tasty treat. Twitter and Facebook are the most common methods for contacting your favorite food truck.
