This is a recipe for Traeger Chili. Here’s what you’ll need:
- 2.5 LBS GROUND BEEF
- 1 LARGE ONION, DICED
- 1 TSP KOSHER SALT
- 1 CAN CHIPOTLES IN ADOBO, MINCED WITH SAUCE
- 1/4 CUP CHILI POWDER
- 1-1/2 TBSP CUMIN
- 3 CLOVES GARLIC, MINCED
- 1 JALAPEÑO PEPPER, MINCED
- 1 (14 OZ) CAN DICED TOMATOES
- 2 CUPS CHICKEN STOCK
- 1/8 CUP FLOUR
- 1/2 TBSP GROUND CINNAMON
- JUICE OF 1 LIME
- 1 HERSHEY’S CHOCOLATE BAR
- SALT AND PEPPER, TO TASTE
Heat a large Dutch oven on the stove top over medium high heat. Brown the beef and drain the fat.
Add all the chili ingredients, minus the chocolate and the lime juice. Preheat your smoker to 350° and place the dutch oven inside, uncovered. Cook for 2 hours, stirring once halfway thru. I used hickory pellets.
Remove from the smoker, add the chocolate and the lime juice, stir and serve.
***Full disclosure, I was NOT a fan of the cinnamon. I felt it overpowered the taste of everything else. I’d suggest either cutting it down to 1/2 tsp, or not using it at all.
