Our co-worker Alyssa joined us for “Foodie Friday” to share a family favorite!
Alyssa, says, “This cake is my favorite because not only does it remind me of my beloved late great-grandma, it was a complete accident that ended up becoming a family tradition that we’ve used for decades. My grandpa is 71 and still looks forward to this cake on his birthday every year!!”
Her Great-Grandma ran out of powdered sugar for frosting and decided to use whipped cream and nesquik powder and now it’s been a family favorite for decades.
Nesquick Chocolate Cake
Frosting:
1 Pint Heavy Whipping Cream
3/4 cup Nesquik powder
Mix well and whip until “stiff” to use as frosting – would recommend refrigerating for a bit before frosting cake
Chocolate cake (Makes 2 9″ rounds):
2 cups all-purpose flour (I sometimes use cake flour, a bit more fine, but depends on how fancy you wanna be!!)
2 cups white granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons vanilla extract
1 cup milk (can use buttermilk to cut the sweetness slightly, or almond works great for a dairy-free alternative!)
1/2 cup vegetable oil
2 large eggs
1 cup boiling water
*Preheat the oven to 350 F and grease/flour the 9in rounds – I take a bit of butter and cover every inch and have never had trouble removing them from the pans!
*Combine the dry ingredients and mix well
*Add everything but the boiling water, mix well on medium speed; slowly add the water until combined
*Bake for 30-35 minutes or until toothpick inserted into center of cake is clean; if the middle is taking a bit to bake fully, I’ll cover with tinfoil for the tail end of baking, 5-10 minutes. Works like a charm.
*Chill and frost!!
