Put on a bib and pull up next to the grill, Amy Iler and JJ Gordon catch up with Scott Thomasson from Pig Tamer BBQ – a competitive BBQ group in the area – to talk about how he got into the competition game, what wood smokes the best and the recipe for “Atomic Buffalo Turds”
Scott shares an amazing story about how a clearance section got him into competitive bar-b-que and how the competitive community rally around each other in good times and bad. Scott is an example of the kind of person who you want to know, specifically, you want to know well enough to be invited over for dinner!
Recipe for Atomic Buffalo Turds
(fast forward to 13:25 to hear more!)
Take a jalapeno and split it in half.
Remove the seeds and membrane
Take your favorite dry rub and spread it lightly along the inside
Fill the inside with cream cheese (get creative and add some cheddar cheese, baby shrimp or maybe some raspberry jam)
Take the whole thing and wrap it with the cheapest, thinnest bacon you can get.
Throw it on the smoker – on top of a cardboard egg container – and smoke it until the bacon is crispy.
