SALISBURY STEAK
Comfort food that makes its own delicious gravy. This was a staple in our home for years. And the smell hits hard when you walk in after raking the leaves or on Halloween!
2 lbs ground beef
1 egg
2 cups beef broth
1/2 cup breadcrumbs
1 packet Onion Soup mix
3 Tbls milk
1 Tbls Worchestshire sauce
1/4 cup flour
2 Tbls vegetable oil
Salt/Pepper to Taste
In a large bowl, mix the ground beef, egg, breadcrumps, onion soup mix, milk and worchestshire sauce until combined.
Divide into 6 even portions – pattied, but not thin. Coat the patties with the flour, lightly.
Add the oil into a pan and set to medium heat. Add the patties and cook until golden brown, do not need to be cooked through.
Layer the cooked patties into a slow cooker.
Pour beef broth over the patties. Cook on low for 4-5 hours.
NOTE – For a great meal, make mashed potatoes to go with and a beef or onion gravy. Pro tip, use the juices from the slow cooker to make the gravy for a rich flavor!
LOW AND SLOW BUFFALO CHICKEN DIP
1 rotisserie chicken, shredded
24 oz cream cheese
2 cups shredded cheddar cheese
3/4 cups buffalo sauce
1/2 cup ranch dressing
Pile everything into a slow cooker and mix. Put on low and cook for 2 hours, stirring every half hour.
Put the temperature to warm and serve right out of the crock!
Serving: sliced French bread, carrots and celery, bleu cheese and ranch for drizzling!
SIMPLE BUTTERNUT SQUASH SOUP
2 lbs butternut squash (peeled and cubed)
3/4 tsp salt
1 Tblsp oilive oil
1 Tbls brown sugar
Pepper, to taste
1 cup whole milk
Add squash, oil, brown sugar and salt to a slow cooker. Let cook on low for 5 hours. Mash the squash (I remove and use a blender). Add the milk and mix together. Let cook another half hour. If you want a thinner mixture, add more milk!
