What elevates ordinary beef stew to extraordinary? Add some glorious wood smoke! Here’s a beef stew with smoked beef.
Here’s what you’ll need:
- 2 lbs cubed beef (round steak or roast)
- 1/2 beer of your choice
- 2 cans beef broth
- 1 small white onion
- 1 cup baby carrots
- 1 can diced tomatoes
- 1 potato, diced
Get your smoker up to temp, around 240°.
Cube the beef into about 1 inch cubes. Place in a foil pan in a single layer, and pour in just enough beer for the bottom half of the meat to sit in it. Season the top layer with salt and pepper. Smoke on full smoke for 1 1/2 hours.
In the meantime, add the other ingredients to a slow cooker with whatever beef stew seasonings you like to use. (I use a mixture of oregano, rosemary, paprika, garlic & onion powder)
Once the meat has smoked for 90 minutes, remove it from the smoker, and add it to the crock pot, and let it cook for another 3-5 hours, or until the vegetables and meat are good and tender.
Serve immediately.
