The Minnesota Dept of Natural Resources has a great “Fall Colors” map on their website. The Map Shows up to date progression so you can plan your route. Here is the Website:

The North Dakota Tourism website is a little different. It gives you some destinations that are known for fall colors, however they do not give you an up to date progression. Here is the Website:
