Thanksgiving is the best meal of the year in my house and smells linger for days in our kitchen. A few years back, I wanted to spice up our leftovers. Don’t get me wrong – turkey sandwiches piled high still roam the house while we put up Christmas decorations…but this leftover hack is for the thrill seekers who want more than just a sandwich!
THANKSGIVING LEFTOVER WAFFLES
This recipe is so simple and requires almost zero effort.
- Get your waffle maker. I have a stand alone, but I have also used a stovetop and even a cast iron over a campfire setup. Turn it up – these aren’t timed, but watched and a nice high heat will crisp up the stuffing/dressing as well as bind it together.
- Put leftover stuffing into the waffle maker. You should need a little muscle to clamp it shut. Plenty of stuffing on the lower layer – mounding some in each of the four edges. Note, there is so much butter in dressing/stuffing already (at least in my recipe) that I never use cooking oil or spray on the griddles.
- Cook the waffles. With my Waring Pro style waffle maker, it takes around 6 minutes and I do two at a time.
- Warm up turkey, mashed potatoes, yams, baked corn, gravy – whatever you like to eat on a leftover sandwich can be dolloped onto this beauty,
- Remove waffles, top with your favorite leftovers. I also add a little cranberry sauce to the plate to even the savory with sweet.
- Consume!
