Easter Ham (in Quarantine)
Ham is favorite for many families around Easter. Ham is a cured and cooked item, so the biggest no-no is to “blast it” and dry it out. So, your goal is just to heat it up.
When you go to heat a ham that has a lot of water in it, you will have excess steam, so tent it with tin foil but give it a little corner.
And, if you are going to glaze it, take off do it quickly and at a high temp (like a broil).
You could even consider flavoring an apple juice with herbs or spices and continually baste the ham.
Tomatoes
If you have tomatoes that need to be used NOW… consider dehydrating them! And, they
In this case, they were roma tomatoes and he sliced them in half. Don’t dress them with anything but salt and pepper. Dehydrate for 6 hours at 135 degrees. They shouldn’t be chewy, they should be prune-like and you should be able to easy remove the skin and seeds.
Chop them up, add them to a sauce… make a jam or spread… garnish your salad, puree them and use them in sauces! Chef Randall calls this his secret weapon!
