I tried something new for the big game and it was a WINNER! Smoked eggs! The smoke adds a whole new level of great taste, and the recipe is quick and easy!
You start by hard-boiling the eggs for 11 minutes. I add my eggs to the water right away and let them come up to temp with the water. After 11 minutes, I put the eggs in an ice bath to chill for at least 5 minutes. Then I peeled them and put them in the fridge. (fig. top left)
Get your smoker up to temp at 225°. The eggs will only be in there for a very short time, so make sure everything is ready to go. I used a bradley rack to get the maximum amount of access to smoke. I used mesquite wood and got the smoke rolling before I put the eggs in the smoker. Once everything was ready, I put the eggs in for 15 minutes – until they were slightly golden. Do NOT over cook! The eggs will be rubbery.
At this point, you can eat them however you like. I used mine to make deviled eggs. Find the recipe below.
Cut the eggs in half and scoop out the yolks. Add the yolks to a food processor and add in the following: (this is for a dozen eggs)
- 1/3 cup mayonnaise
- 1 Tablespoon dijon mustard
- 1 teaspoon hot sauce
- 1 teaspoon Worcestershire sauce
- Salt & Pepper to taste
Pulse together to make a paste and add to the egg white halves. Chill and serve.
