Save some of that brisket for next day nachos!
Get some nacho chips and spread them on a foil lined cookie sheet. Sprinkle with a combo of shredded pepper jack and cheddar cheese, chopped brisket and any other goodies you like on your nachos. I added onions, and black olives. Pop it in the smoker for 1 hour at 300° to melt the cheese.
Top with pico de gallo and eat.
