Try this super easy recipe for Italian Beef on your smoker.
Here’s what you’ll need:
- 4 lb lean boneless beef roast (I used sirloin)
- kosher salt
- ground black pepper
- Trager Prime Rib Rub (or your favorite beef rub)
- 6 cups beef broth
- hoagie/sub buns
- provolone cheese
- 1 green pepper, sliced
- 1 medium onion, sliced
Rinse the roast, and pat dry with paper towel. Then, apply a thin coating of “binder”, I usually use yellow mustard, but this time I used EVOO. Sprinkle with salt a pepper, and cover liberally with the rub.
Preheat smoker or grill to 450°.
When preheated, place the roast on the grates and smoke with full smoke for an hour to get some good browning all over. I used hickory wood.
After an hour at 450°, place the roast in your dutch oven with the 6 cups of beef stock. Cover, and return to the smoker with the heat reduced to 350°. Cook until fork tender, 3-4 hours.
As it’s getting close to being done, fry up and carmelize the peppers and onions in a skillet. If on the grill, toss in a little olive oil, sprinkle with salt and pepper, and place in a veggie basket on the heat.
To assemble, add meat, cheese and peppers to the bun and serve. If you’re a true beast, toss some of that good cooking liquid over the sandwich.
