Every year, the weekend before Labor Day, thousands of people flock to Barnesville, MN for their annual “Potato Days” celebration. Mashed Potato Wrestling, French Fry Feed and many more spud related activities capture the imagination of the young and old.
One of the “must do” aspects of Potato Days would be a tour through the food stands. Everything from giant baked potatoes smothered in pulled pork to mashed potato bowls of every size to the best darn lefse you can imagine can be found in a half block section off of the main drag. Vendors from local churches make potato dumplings. Regional food trucks offer up their slow roasted brisket. And a staple of any Midwestern summer festival – KETTLE CORN!
The churches who participate use the money they raise to fund efforts with youth ministries, church projects and community activities. For most, this is the biggest fundraiser of the year. And considering that you get some of the best home cooked food out of the deal – it’s well worth your time!
The church recipes got JJ thinking about an old church cookbook he had and pulled out this Gordon family favorite. We’ve arrived at the peak peach season. You can find semis unloading lug after lug of delicious golden peaches. A lot of great preserving and canning taking place all over the region – but you can also put those peaches to good use as a dessert!
Peachy Keen Jell-O
It’s a simple dessert with a graham cracker crust on the bottom, a layer of whipped topping and a peach gelatin top that looks beautiful. Easy to make in advance and bring to a Labor Day celebration.
Ingredients
- BASE:
- 1-1/3 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- CREAM LAYER:
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup sugar
- 1/4 cup milk
- 1 container of Extra Creamy Cool Whip
- TOP LAYER:
- 2 Large peaches (sliced)
- 1 package peach Jell-O
- 3/4 cup boiling water
- 1-1/4 cups cold water
- Combine the crumbs, sugar and butter. Press into a 13-in. x 9-in. dish.
- Beat cream cheese and sugar together, gradually add the milk. Fold in the whipped topping. Spread over crust.
- Add the sliced peaches on top of the cream layer. Follow directions on the Jell-O box. Put the Jell-O into the fridge for half an hour.
- Gently spoon Jell-O over peaches, add additional peaches on the very top. Chill until set.
