at the Fargo Theater. Chef Irvine entertained the crowd for almost two and half hours with live cooking demonstrations (often times with unique ingredients or challenges) and stories from his numerous shows/career.
Chef Irvine gave some of his personal tips to the crowd and in this podcast, you can find out about his preference for grape seed oil over olive oil and a tip about common home table sat and pepper.
Tip #1 – The olive oil you are using is probably not true olive oil and even if it is, there are better oils to cook with. Chef Irvine recommended grape seed oil. It allows for a higher cooking temperature and has virtually no taste. He was adamant about using this type of oil to change the way you are cooking ANYTHING!
Tip #2 – Use kosher salt or, better yet, sea salt that you are grinding yourself. The common table salt has a lot of chemicals – such as silicon dioxide, so a purer salt will be the two listed above.
Tip #3 – Get ready to make a stop on the way home. Pick up a coffee grinder. Use said coffee grinder to grind peppercorns. Your standard hand grinder will give you a fresher cracked pepper than a shaker, but adding the heat and the centrifugal force will make this pepper the best you have ever tasted. In fact, you really haven’t tried pepper until you try it this way!
