Sweet Garlic Marinade

Yields approx. 2 ½ cups
Fresh Garlic Cloves 3 tbsp.
Light Brown Sugar ¼ cup
Lemon Zest 1-2 lemons
Black Pepper, fresh ground 1 tbsp.
Chile Flakes 2 tsp.
Olive Oil 2 cups
Jamaican Style Jerk Marinade

Yields approx. 3 cups
Scotch Bonnet or Habanero Chile 2 ea. (seeded)
Fresh Ginger ½ tbsp. (peeled & rough chopped)
Garlic Clove 6 ea.
Green Onion 8 ea. (rough chopped, green & white part)
Fresh Thyme Leaves ¼ cup
Fresh Pineapple ½ cup (cubed)
Soy Sauce 1 tbsp.
Allspice, fresh ground ½ tbsp.
Dark Brown Sugar 4 tbsp.
Fresh Lime Juice 2 tbsp.
Canola Oil ¼ cup
Combine all ingredients in a food processor and blend until smooth. Adjust seasonings as needed. Refrigerate and use as needed.
