Quick and Easy Healthy Halloween Snacks
Is there an actual recipe for Rice Krispies Treats? I’m not sure. I know it involves marshmallows, butter and Rice Krispies, but I don’t know the precise recipe advocated by Kellogg’s. I use a half a stick of butter, a bag of marshmallows (minus one or two sampled for quality control), and (without fail) more rice cereal than I meant to use.
Rice Krispie Treat Pumpkins are made the same way as regular Rice Krispie bars, but with one fun addition: food coloring!
McCormick doesn’t sell orange food coloring, but red and yellow make orange, and the kids think it’s fun to mix colors, so we’re all winners.
Rice Krispie Treat Pumpkins
1. In a large bowl, melt together half a stick of butter and a bag of marshmallows in the microwave, stirring at 1 minute intervals.
2. When marshmallows are fully melted, add food coloring and stir until marshmallow mix is colored throughout. For orange, use about 10 drops of yellow and 2-3 drops of red, more of both for a brighter hue.
3. Mix in cereal, about 6 cups, coating it completely with marshmallows.
4. Let cool slightly before shaping into little balls with greased or wet hands. Place on waxed paper to firm up.
5. When the balls are cool, stick a Tootsie Roll or a green Frootie into the pumpkin as a stem.
6. Show them to your kids and if they say, “Cool! Pumpkins!” your mission is accomplished.
