Quick and Simple Healthy Halloween Snacks
This week, I’ve got something a little more sophisticated cooked up: Pumpkin Blondies. Chewy and dense, with a robust pumpkin flavor and a hint of spice, these bars are perfect for fall.
I like recipes that come together quickly and don’t require elaborate ingredients or electrical kitchen gadgets, and this one satisfies all. One bowl, one whisk, one pan, and a couple of measuring devices.

Pumpkin Blondies
½ cup butter
1 egg
1 cup brown sugar
¾ cup pumpkin puree
1 tbsp vanilla
2 tsp pumpkin pie spice (recipe included below)
1 ¼ cup flour
Topping:
2 tbsp sugar
2 tsp cinnamon
Pumpkin Pie Spice: Mix together 3 tbsp cinnamon, 2 tsp ginger, 2 tsp nutmeg, 1 ½ tsp allspice, 1 ½ tsp cloves. Store in an airtight container.
- Preheat oven to 350 degrees. Grease an 8 by 8 inch baking pan, or line with parchment paper.
- In a mixing bowl, melt butter in microwave. Let cool slightly before adding the egg.
- Add brown sugar, pumpkin, vanilla, and pumpkin pie spice and whisk until smooth.
- Add flour and stir until combined.
- Pour batter into prepared pan and smooth out the top.
- Mix cinnamon and sugar and sprinkle liberally over the top.
- Bake for about 25 minutes or until a toothpick inserted at the center comes out clean.
I’m not saying it is humanly possible to wait, but these bars taste twice as good a few days after baking. The flavors marry, they become more moist, and the sugar topping sinks in to create a sweet glaze on the top. I wish you the very best of luck waiting that long to try them!
