Amy & JJ go “Oot & Aboot” to give you a tour of the NDSU Meat Sciences Lab. And, yes!, they have a store front at Sheppard Arena on the NDSU Campus.
It’s a unique place that employees about 10 students to harvest the animals from campus and process them into delicious meats the community can enjoy!
You can also pick up their products at Mac’s Hardware or enjoy them at Herd & Horns and Wurst Beer Hall.
IN THIS PODCAST: Spencer Wirt, the Manager of the Lab, explains their operation!
SPENCER FACTOID: That “blood” you see at the bottom of the red meat packaging is actually not blood at all… it is a mix of water and myoglobin – a protein found within the blood of the animal. The blood is, of course, removed. If it wasn’t, meat would just taste like iron!
Spencer Wirt, Graduate Student & Meat Lab Manger
