Amy Hirsch joins Amy Iler and JJ Gordon in the studio to talk about a Midwestern favorite – RHUBARB. Whether it’s a pie or a sauce or a marinade, the tart flavor of rhubarb is unmatched in the eyes of most Midwesterners. Amy shares a recipe for rhubarb cream cake and rhubarb infused vodka!
RHUBARB INFUSED VODKA
Step 1: Buy a liter (or more) of vodka.
Step 2: Cut up 3 or 4 cups of rhubarb and 3 or 4 cups of strawberries.
Step 3: Split the strawberries and rhubarb into 3 quart mason jars and fill jars with vodka.
Step 4: Store in a cool, dark place and shake daily for 5-7 days, then strain out fruit pieces.
Step 5: Enjoy.

RHUBARB CREAM CAKE
- 1 package yellow cake mix (regular size)
- 4 cups chopped fresh or frozen rhubarb
- 1 cup sugar
- 1 cup Heavy Whipping Cream
- Make the cake mix, pour the sugar on top of the uncooked mix, then the rhubarb and finally the whipped whipping cream. Bake according to the directions on the box. Voila! Easy and delicious.
